Grand River Valley's Ice Wine Festival

Saturdays March 2nd, 9th & 16th, noon-5 pm.

Join Ferrante Winery, Debonné Vineyards, Grand River Cellars, Laurello Vineyards & St. Joseph Vineyards for Ohio's 10th Annual Ice Wine Festival, a progressive tasting of the ice wine produced in the Grand River Valley.

Each winery will provide a sample of their ice wines along with a complimentary appetizer. Enjoy a featured event at each establishment.

At 1pm each day of the festival our Chef Nina will showcase one of her culinary creations during our food demonstration.  Don't miss it!

COLD WINTER BLAST SAVES THE BEST FOR LAST - FERRANTE WINERY ICE WINE GRAPES HARVESTED
 
    
Ashtabula County, OH….. “Tonight’s the right nigh,! (January 21st 2013)! ”, says Nicholas Ferrante, winemaker at Ferrante Winery in Harpersfield Township, Ashtabula County.  He continues, “I made the decision to allow the grapes to continue to hang until colder temperatures created a solid freeze.”  This decision did not come without consequences.  There will be a loss in yield due to shriveling, decomposition, and animals such as deer and raccoons eating the grapes through the netting.  Despite the lower yield in fruit, the flavors will be more concentrated resulting in an exceptional wine.  
     The cold of Northeast Ohio brings out the sweet nectar frozen on the Vidal Blanc vines in snow laden vineyards located approximately five miles south of Lake Erie.  This creates a microclimate that allows Ohio winemakers to grow grapes and make exceptional ice wines.  “We were among one the first ice wine producers in the area.” says Nicholas Ferrante.   The grapes containing the sweet nectar will be mechanically harvested, squeezed and pressed early into the morning. The long wait and preparation will pay off as temperatures are forecasted to dip below 15 degrees.
     Ice wine grapes are normally harvested in late December or January, in fact some ice wine grapes in the region were picked earlier in January where there was a small window of colder temperatures.  Despite the colder temperature Ferrante’s Ice Wine grapes weren’t entirely frozen.  The fruit must be properly frozen with temperatures ranging between 12 and 17 degrees to ensure higher sugar content and quality.
     Generally, grapes contain a higher amount of water than sugar, so once the temperature drops below freezing point, the water in the grapes becomes frozen.  This concentrates the sugar and when pressed, produces a pure flavor with natural sweetness.  
     We are hoping to yield about 8 to 10 tons of grapes which will only produce about 300 gallons of wine.   The grapes that are picked average 35 brix and will be fermented down to 15% residual sugar.  The wine will then be bottled in the Spring of 2013.   Vidal Blanc Ice Wine is a dessert wine with rich aromas of apricot and orange blossoms with flavors of honey and ripe melon.

Recipe of the Month

Ferrante Winery's

Cabernet Franc Dark Chocolate Truffles

 

Ingredients:

1 Cup Seedless Raspberry Preserves

2 Tablespoons of Ferrante’s Grand River Valley Cabernet Franc

½ Cup Evaporated Milk

12 Ounces (1 package) Dark Chocolate Morsels

½ Teaspoon Instant Coffee

¾ Cup Almonds Toasted

 

Directions:

In a small bowl combine the raspberry preserves and the wine.  Set aside.  In a saucepan bring milk to a rolling boil over a medium heat, stir for 2 minutes. Remove from heat stir in chocolate, raspberry preserve wine mixture, and coffee.  Stir until smooth.  Chill for 1 hour.  Once chilled roll into 1 inch round balls and roll in toasted almonds.   

Directions for Toasted Almonds:

Preheat the oven to 350 degrees.  Place almonds on a baking sheet and toast for approximately 8 - 10 minutes.  Make sure the almonds don’t burn.  Remove from oven and cool.  Crush almonds into small pieces. 

Makes 2 ½ dozen.
